Fruit Compote & Yoghurt Chia Pudding

Running out of ideas for fruit compote? Aside from heating it and enjoying it with cold greek yoghurt this is my favourite Sundae-esk way to enjoy any flavour fruit compote.

The fibre and omegas from the chia seeds combined with the sweet nutrient packed compote, creamy yoghurt and crunch of the roast pumpkin seeds makes my mouth and tummy smile every time!

Makes 1 Serve

Cook Time ~ 30 mins

Equipment - Kettle

Ingredients

  • 1 tbsp Chia Seeds

  • 1/2 cup (125ml) Hot Water

  • 1 cup (250ml) Fruit Compote (any combination of fruits will work)

  • 3/4 cup (188ml) Greek Yoghurt

Method

  1. Hydrate Chia Seeds with hot water (until they swell and make a gel)

  2. Refrigerate to cool

  3. Layer with Fruit Compote and Yoghurt

  4. Enjoy for a delicious dessert/breakfast/snack

Tips

  • Tips- make sure the chia gel has completely cooled before layering (a dip in the freezer can speed this up)

  • Variations- potential additions of lemon/orange zest; fresh chopped mint, top with roast nuts; top with grated dark chocolate; add cinnamon to the yoghurt

  • Serving suggestions- layer up in small airtight containers for an easy breakfast/snack/dessert

  • Store in airtight container for up to 4 days, do not freeze!
