Berry & Kefir Smoothie Bowl

Welcome to my obsession! I start almost every day with Kefir, it has been wildly beneficial for my gut and mental health so the affection I hold for it is multi-level.

I usually make a smoothie with some form of frozen fruit (berries, banana, mango, pineapple etc) and greens of some variety (spinach, lettuce, cucumber, kale etc) so stay tuned for many variations.

This one is a lovely sweet, cool smoothie breakfast bowl with the wonderful crunch of roast pepitas and toasted coconut flakes and a drizzle of roast pumpkin oil to top it off! Yes, I know it sounds odd at first but the combination of berries and Styrian oil is divine!

Makes 4 Serves

Cook Time - 5 mins

Equipment - Blender

Ingredients

  • 4 cups Frozen Mixed Berries

  • ~2 cups (500ml) Kefir (or 1 ½ cups Greek Yoghurt + ½ cup milk)

  • 1 tbsp Roast Pepitas

  • 2 tbsp Toasted Coconut flakes (I like the salted ones)

  • 1 tsp Styrian oil

Method

  1. Combine kefir and frozen berries in blender

  2. Blend until smooth

  3. Serve topped with Roast Pepitas, Styrian Oil and Coconut Flakes

  4. Enjoy immediately! Do not refreeze, the texture will change

Tips

  • Tips- Hold back some of the kefir at first to make sure you achieve your perfect consistency, you can always add more!

  • Variations- switch berries for almost any frozen fruit, add frozen spinach/kale

  • Serving suggestions- Top with mixed roasted nuts, cinnamon, nut butters

  • Store refrigerate in an airtight container for a day but the texture will change
