Healing Mushroom Congee

Herbals- Dried Lotus Seeds, Chinese Yam, Goji Berries, Jujube (Chinese Red Dates), Black Sesame Seeds, Dried Mushrooms (Golden Thread, Shitake, Black Fungus, Morel), Dried Ginger, Astragalus Root,

Grain Mix - Brown Rice, Black rice, Quinoa, Millet, Barley, Red Lentils

Pre-mixed and ready for cooking!

I know this isn’t a ‘normal’ Aussie breakfast but when I lived in China it was a staple. It’s warm, hearty and deeply satisfying, just like a nice big bowl of oatmeal, with additional health benefits. *not a TCM doctor, just saying it’s full of the good stuff!

The barley and black rice will hold it’s texture more and the millet, lentils and brown rice will soften further to give you a range of textures in each bite and it’s littered with treasures of mushrooms and seeds to find throughout.

This healing mixture works out to approximately 1 cup that I cook in my rice cooker with 4 cups of water on the porridge setting but if you want a single portion just cook 1/3 cup with 1 ½ cups of water.

To make it super easy when I’m half asleep in the morning I have a pre mixed bag of this in the cupboard ready to go!

Cook Time - ~60 mins

Equipment - Rice Cooker (Porridge Setting)

Ingredients

  • 2 tbsp Barley

  • 2 tbsp Millet

  • 2 tbsp Quinoa

  • 2 tbsp Black Rice

  • 2 tbsp Brown Rice

  • 2 tbsp Red Lentils

  • ½ tbsp Black Sesame Seeds

  • ½ tbsp Chinese Yam

  • ½ tbsp Lotus Seed

  • ½ tbsp Goji Berries

  • ½ tbsp Jujube (Chinese Dates), sliced

  • ½ Astragalus Root

  • ½ tbsp Dried Ginger (fresh/dried)

  • ½ tbsp Codonopsis Root

  • 2 tbsp Dried Mushrooms- ½ tbsp each: Golden Thread; Shitake; Black Fungus; Morel

  • 4 cups/1L Water

  • 1 tbsp Salt, Himalayan is my fave but soy/tamari also tastes great!

  • Optional: Roast Sesame Oil to garnish

Method

  1. Rinse grains

  2. Combine ingredients in rice cooker

  3. Cook on porridge setting for 1hr

  4. Serve drizzled with Roast Sesame Oil

  5. Enjoy! warm (or if you prefer it cool it’s still yum)

Tips

  • Tips - Pre mix all dried ingredients ready for easy use, use an electric rice cooker and you can walk away and come back to a perfect meal

  • Variations - Soy sauce/tamari to replace the salt, alternate dried mushrooms, leave out the dried fruit if you’re sensitive to fructose

  • Store refrigerate in an airtight container for up to 4 days or freeze for months
