Honey & Garlic, Kefir Dressing
This utterly delicious creamy honey garlic dressing uses the Honey Fermented Garlic from Tim Spector’s ‘Ferment’.
It’s a sweet, deep, creamy, zingy and nutrient dense dressing that will go wonderfully with almost any salad, vegetable, grains, tofu/beans or double as a dip.
Makes 4 Serves
Cook Time - 4 hrs + 5 mins
Equipment - Blender
Ingredients
1 clove Honey Fermented Garlic + 2 tbsp Garlic Honey
2 cups (500ml) Kefir strained for 4hrs (or 1.5 cups Greek Yoghurt)
1 tbsp Dijon Mustard
3 tbsp Broth Concentrate/ stock powder
Method
Strain Kefir in cheesecloth/nut milk bag for ~4hrs (or until the consistency of thick Greek Yoghurt)
Combine ingredients in blender
Blend until smooth
Enjoy! with almost any salad/veggies/grains/protein
Tips
Tips- make sure there’s a bowl under your straining kefir!
Variations- substitute Greek Yoghurt for Kefir; remove mustard and add any fresh/dried herbs/spices for desired flavour profile
Serving suggestions- enjoy as soon as possible, it will intensify in garlic flavour over the days
Store refrigerate in airtight container for up to 4 days (it will continue to ferment); do not freeze
