Kefir Berry Nut Bowl

This is another one of my favourite quick and easy breakfast bowls (that can also double as a snack or dessert in smaller portions). It’s jam packed full of nutrients and the fat/protein of the kefir and nuts keeps you full for way longer than you’d imagine! Think of it like the cool summer version of a hearty berry oatmeal.

Ingredients

  • 1 cup Mixed Berries I go for frozen because they’re cheapest and it’s usually warm here but you can use fresh or defrost them if you prefer

  • 1 cup Kefir, if you like it thicker ferment it in the fridge, or for thinner on the counter

  • 1 tbsp Pepitas /pumpkin seeds

  • 1 tsp Chia seeds they will begin to hydrate in the kefir

  • 1 tbsp Walnuts, roast is my preference but raw is also yum

  • 1 tbsp toasted coconut flakes I like the salted ones best!

Method

  1. Combine all ingredients in bowl

  2. Leave to sit for a couple of minutes to soften

  3. Enjoy!

Tips

  • Tips - make it before your shower and come back to soft berries and plump chia seeds

  • Variations - use any berries, combination or just one, strawberries, blueberries, raspberries, blackberries etc. and any nuts/seeds you like, it’s delicious with almonds, pecans, brazil nuts, macadamias etc etc.

  • Serving suggestions - It pairs exceptionally well with yoghurt, oatmeal/cereal
