Warm Sage & Onion Apples with Crunchy Cucumber

I know this one is a little different but the combination of soft, warm, sweet sage & onion apples with fresh crunchy raw cucumber makes it for me. You could call it a warm salad? or a side for a roast dinner? Who cares really, it’s delicious, just enjoy it!

Makes 1 main/2 sides

Cook Time - 15 mins

Equipment - Cooktop

Ingredients

  • 2 medium Brown Onions (360g)

  • 1 clove Garlic

  • 2 Apples (225g)

  • 1 small Cucumber (150g)

  • ¼ cup fresh Thyme

  • ¼ cup fresh Sage

  • Rosemary Salt to taste (~1tsp)

Method

  1. Dice onions, core and chop apples and cucumber into bite sized chunks

  2. Add onions to the pan, cook until soft and golden, adding small splashes of water as needed to deglaze the pan

  3. Add garlic, salt, herbs and apple, cook until warm and soft

  4. Take off the heat, stir through the cold cucumber, and serve

  5. Enjoy!

Tips

  • Tips - Frying the onions in water is great if you’re trying to use less oil but feel free to use oil if you prefer!

  • Variations - You could substitute the herbs/spices for something stronger if you want more of a punch

  • Serving suggestions - A large serve with added beans/chickpeas would make a great salad; side in a roast dinner

  • Store refrigerated in airtight container for up to 4 days; do not freeze
