Apple & Cinnamon Oatmeal

There is something about the warm hug of fruit and oatmeal combined with the cold milk (or Greek Yoghurt or Kefir) that satisfies a spot deep within my heart (and stomach!)

Make sure you go for steel cut oats for the best texture and give the traditional addition of salt a try before you deny yourself the perfect balance of sweet-savoury, warm-cold. I could eat this every day and be a happy soul.

Makes 9 Serves (keeps and freezes well)

Cook Time - 20 mins

Equipment - Pressure Cooker (or stovetop)

Ingredients

  • 9 medium Apples

  • 2 cups Steel Cut Oatmeal

  • 8 cups (2L) Water

  • ¼ cup ground Cinnamon

  • 1/4 cup Ground Flax Seed

  • Cold Milk/Kefir/Yoghurt to serve

  • Salt to taste (~1 tbsp)

Method

  1. Wash and chop Apples

  2. Combine apples, oatmeal, cinnamon, salt and water in pressure cooker (or large pot)

  3. Cook on high for 10 mins (natural release) OR for 30 mins on the stove, stirring continuously for the last 10 mins

  4. Taste to check for desired texture (soft and creamy but with a little chew) and salt balance

  5. Sprinkle in ground flax seed as stirring (to avoid clumps)

  6. Enjoy warm with cold milk/kefir/greek yoghurt as desired

Tips

  • Tips- Make sure you choose steel cut oatmeal for the best texture- instant oats are not the same!!

  • Variations-Bananas instead of apples is another favourite, all berries work splendidly too!

  • Serving suggestions- warm with cold milk/greek yoghurt/kefir, old as a stacked trifle, roasted nuts/seeds/coconut flakes to top

  • Store refrigerated in airtight container for up to 4 days, freezes well!
