Beetroot, Feta & Walnut Salad

The combo of beetroot, feta and walnuts is a solid start for a salad if ever I made one! and with the base of my favourite baby spinach and cucumber you’re on to a winner!

Add in some sweet golden onions and you’ve got the combo of warm (onions and Roast Walnuts) and cool (feta, beetroot, cucumber) with soft and crunchy. My perfect plate.

Makes 3 Serves

Equipment - Cooktop

Ingredients

  • 1 large Onion

  • 280g Baby Spinach

  • 1/2 Cucumber

  • 250g Roast Beetroot (or drained canned)

  • 200g Danish Feta

  • ½ cup Roast Walnuts

  • 1 tbsp Salt

  • 1 tsp Cracked Black Pepper

  • 1 tbsp Sherry Vinegar

Method

  1. Slice onion and fry until golden

  2. Dice beetroot, cucumber and feta

  3. Wash spinach and lay as base, add chopped vegetables and feta

  4. Roast Walnuts

  5. Dress with sherry vinegar; season with salt and pepper

  6. Top with walnuts and onions and Enjoy!

Tips

  • Tips - Having roast beetroot in the fridge or canned on hand makes it easy! You can warm up already roasted nuts in a dry pan.

  • Variations - different flavoured vinegars, addition of olive/avo oil

  • Store refrigerate in airtight container for up to 4 days (but tastes best warm)
