Blueberry Chia Jam

This Blueberry Chia Jam is a THICK delicious, not too sweet, spreadable (or spoonable) that is divine on toast, scones, swirled through oatmeal, in a smoothie or as a sundae ingredient. I often combine it with Greek Yoghurt or Coconut Tofu Cream which is heavenly.

Texture wise it’s up to you, I like it smooth but if you want some whole blueberries and chia seeds just hold some back before blending then mix them through!

Makes 8 Serves

Cook Time - 15 mins

Equipment - Blender

Ingredients

  • 3 cups Blueberries, I use frozen because they’re cheaper and let them thaw

  • ½ cup Chia seeds, any colour or basil seeds

  • 1 cup Hot Water

  • 1 tsp Lime/Lemon Juice, to balance

  • 2 tbsp Honey/12 Stevia tablets, dissolved in water

Method

  1. Add blueberries to blender and allow to thaw while you….

  2. Combine chia, lemon juice, honey/stevia and hot water

  3. Stir well to dissolve and allow to hydrate in hot water for 10 mins

  4. Combine and blend until smooth (keep some aside if you prefer a chunky jam)

  5. Enjoy!

Tips

  • Tips - Make sure your berries have thawed enough blend well!

  • Variations - Raspberries, Strawberries, Mixed Berries etc.

  • Serving suggestions - smoothies, sundaes, on toast/scones, stirred through oatmeal, as a recipe ingredient

  • Store refrigerate in an airtight container for up to 4 days; I suspect it would freeze ok but it doesn’t last long enough for me to check!
