Blackberry, Raspberry, Blueberry Coconut and Mint Sundae

I adore these for dessert but they make a great breakfast or snack. This is really more of an ‘assembly’ than a recipe but definitely quick and easy!

You can use almost any fruit or topping, think nuts/seeds/toasted coconut/grated chocolate etc. and experiment to find your fave combinations (Blueberry & banana; Blackberry & apple; Strawberry & chocolate; Mango & passionfruit etc.)

Ingredients

  • 1 cup Greek Yoghurt, I like the thick ones like Tamar Valley and Paris Creek Farms best

  • 1 cup Fruit of choice (Frozen mixed berries, banana, blueberries, raspberries, mango, pineapple, passionfruit, fruit compote/puree)

  • Optional: ~ 1 tbsp Mint, Toasted Coconut, Roast Nuts, Grated Dark Chocolate

Method

  1. Combine yoghurt and fruit in alternating layers in glass jar

  2. Top with Mint/Toasted Coconut/Nuts/Seeds/ Grated Dark Chocolate

  3. Enjoy!

Tips

  • Tips - Let your berries thaw ahead of time if using frozen so they have a semi hard texture

  • Variations - mix in cinnamon/vanilla into the yoghurt, add in a layer of chia seeds or grated chocolate

  • Serving suggestions - mini versions in ramekins for snacks/guests

  • Store refrigerate in airtight container for up to 4 days
