Nectarine, Pear, Lettuce & Kefir Smoothie

Today’s edition of the Daily Kefir Smoothie is a sweet Nectarine, Pear and Lettuce version. (I promise, you don’t taste the greens!)

I start almost every day with Kefir, it has been wildly beneficial for my gut and mental health so the affection I hold for it is multi-level.

I usually make a smoothie with some form of frozen fruit (berries, banana, mango, pineapple etc) and greens of some variety (spinach, lettuce, cucumber, kale etc) so stay tuned for many variations!

Makes 2 Serves

Cook Time - 3 mins

Equipment - Blender

Ingredients

  • 1 Pear, over ripe is no problems in smoothies, the juicier the better!

  • 3 Nectarines

  • 2 cups (500ml) Kefir (or 1 ½ cups Greek Yoghurt + ½ cup milk)

  • ~ 4 cups Lettuce, I grow a mixture of lettuce leaves, but whatever you have will work

Method

  1. Wash and cut up fruit

  2. Combine all ingredients in blender

  3. Blend until lettuce is no longer visible

  4. Enjoy immediately!

Tips

  • Tips- Hold back some of the kefir at first to make sure you achieve your perfect consistency, you can always add more!

  • Variations- switch berries for almost any frozen fruit, add frozen spinach/kale

  • Serving suggestions- Top with mixed roasted nuts, coconut flakes, cinnamon, nut butters

  • Store refrigerate in an airtight container for a day but the texture will change
