High Fibre Fruit Jelly
This high fibre jelly is now a regular on the menu at my house. It’s a sweet and soothing dose of soluble fibre that is the perfect option for my fussy tummy. I’ll happily have it for breakfast, snacks or desserts- whenever I feel like a soft sweet treat or need to up my fibre intake!
It’s got a soft springy, almost sticky texture similar to jelly/agar agar/tapioca/mochi. I’m a long time lover of that QQ texture that asian cuisine prizes and this really hits the spot!
I enjoy it best served with something creamy like Greek Yoghurt, Blended Silken Tofu or Goats Curd (as pictured) and it can also be made with any fresh juice rather than freeze dried fruit and water if you prefer.
Makes 4 Serves
Cook Time - 5 mins + 1hr setting
Equipment - Stick Blender
Ingredients
2 tbsp Freeze Dried Fruit powder, any! (so far I’ve tired blueberry, raspberry, strawberry, mango, banana, passionfruit, pineapple, blackberry and they’re all good!)
1 tbsp Psyllium Husks
½ tsp Salt Fine Himalayan is my preference but any will work
Stevia 6 tablets/or 1.5 tbsp Honey
1 ½ cups (375 mls) Warm Water
Method
Combine all ingredients in jar (I use a 550ml one)
Blend with stick blender until there are no visible lumps
Set in the fridge for approximately an hour
Enjoy! I love it cold with something creamy
Tips
Tips- If you don’t have a stick blender just put the lid on and give it a good shake. Go slow, if you’re not used to a high fibre diet start with small portions!
Variations- all the flavours of freeze dried fruit under the sun! and all the combinations you can think of. Some winners: strawberry & banana; pineapple, mango & passionfruit, orange & mango; apple & blackberry etc.
Serving suggestions- I love it with something creamy like Greek Yoghurt, Goats Curds or Silken Tofu. It also goes well with oatmeal and in a parfait/layered recipe. If you’re into the crunch adding granola/nuts/seeds on top
Store refrigerate in airtight container for up to 4 days (not sure if it freezes well, I’ll get back to you!)
