Pineapple Kefir Soft Serve

Quick, easy, delicious, using fridge/freezer staples? Winner!! This sweet and tangy tropical soft serve is packed full of nutrients from the pineapple and will help feed your gut with all the goodness of the creamy kefir.

I love this as a breakfast, snack or dessert and the sneakily high protein content keeps me full. It never fails me!

Makes 4 Serves

Cook Time - 3 mins

Equipment - Blender

Ingredients

  • 500g Frozen Pineapple, or almost any other frozen fruit you wish

  • 2 cups/500ml Kefir (or Greek Yoghurt)

Method

  1. Combine ingredients in blender

  2. Blend until smooth and creamy (longer than you think with pineapple)

  3. Enjoy immediately! (do not refreeze)

Tips

  • Tips- leave your frozen pineapple to thaw for a few minutes if your blender is struggling, don’t add water or refreeze as it ruins the texture

  • Variations- pretty much any other frozen fruit, switching the kefir out for Greek Yoghurt, Coconut Yoghurt, Coconut Cream etc.

  • Serving suggestions- Top with roasted coconut flakes, drizzle with coconut cream
