Yoghurt Berry Toast
It might be clear by now that I really enjoy the combination of warm and cold, smooth and crunchy, sweet and salty and this is another recipe that masters that balancing act.
Did you know that rich, creamy Greek Yoghurt when combined with berries makes a delicious, filling alternative to jam? and if you prefer something more nutty can also try the Tahini Berry combination!

Equipment - Toaster/Grill
Ingredients
Sourdough, 2 slices, spelt sourdough is my preference
1 cup Mixed Berries, frozen are cheaper!
½ cup Greek Yoghurt, I like a thick one like Paris Creek Farms or Tamar Valley
dash of Salt, fine Himalayan is my preference
Method
Combine berries, yoghurt and salt in a bowl
Mash with a fork until combined well
Toast bread and Top with the mixture
Enjoy!
Tips
Tips - If you would prefer it room temperature rather than the hot/cold combo and would like a firmer texture try adding ground flax/chia seeds
Variations - Tahini Berry Toast; Raspberries, blueberries, additional coconut, chia seeds, pepitas, nuts etc.
Store refrigerate before adding to toast, in airtight container for up to 4 days- it will be a thinner texture than pictured though!
